I made a really delicious stirfry from my stirfry book the other night and thought I would share :D
Rice Noodle Stir-Fry
150g thick rice stick noodles (or you could use any other noodle or rice)
2 tablespoons peanut oil
750g minced beef (or chicken or diced chicken or beef)
6 green onions, chopped
2 cloves garlic, crushed
1 medium (200g) red capsicum, sliced thinly
1 medium (200g) yellow capsicum, sliced thinly
2 tablespoons green curry paste
2 tablespoons sweet chilli sauce
2 teaspoons fish sauce
1 cup (250ml) coconut milk (could use light or light evaporated milk with coconut essence)
1/4 cup chopped fresh coriander leaves
Place noodles in large heatproof bowl, cover with boiling water, stand 20 mins or until tender; drain
Heat half the oil in wok or large pan; stir-fry beef, in batches, until well browned. Heat remaining oil in same pan; stir-fry onions, garlic, capsicum and paste until capsicum is softened slightly.
Return beef to pan with noodles and remaining ingredients; stir-fry for 1 minute or until heated through.
Note: to lower the fat use light coconut milk or light condensed milk with 4 drops of coconut essence. I cooked it with beef strips as we didn't have any minced beef. I also served it up with rice because hubby wanted rice instead of noodles.
