Surely the fountain would come woith instructions?
Any fruit in large pieces (strawberries, pineapple, banana), marshmallows or even skewers of pound cake (holds together well).

Hi ~Ang~,
I am experienced in this field. I did hire a large fountain for a "Willy Wonka" themed xmas party I did at work (for children of staff....the day before Xmas break). It was 4 tiers and kept the mum's enthralled just like the kiddies. I expect this to be on a larger scale then what you are doing but the principle is the same.
The chocolate fountain people supplied 10kg of milk Belgian chocolate (in 2.5kg buckets). It was for 130-150 people. I don't know what the cocoa butter level was, nor do I know what the supermarket equivalent would be...sorry!! There were specific microwave heating instructions which included melting the chocolate for 3 minutes with the bucket sealed, then rolling the bucket back and forth. Repeat. Check chocolate with a spoon or knife. If still not melted in the centre continue the process, now for 2 minutes at a time. Once the chocolate is molten stir well and then pour into the fountain. Turn on the machine.
Basically you have oodles of wooden skewers about and loads of serviettes. You may need to educate persons on safe food handling (ie. no fingers, no tongues etc directly into the chocolate...I am serious! Depends on the maturity level of the guests!! ha ha) Expect some mess on the table and a little on the ground.
Food to use:
marshmellows, strawberries (washed and minus the green bit), fresh pineapple (cut into chunks with no skin), chunks of just ripe banana (i.e. not too soft), wedges of kiwi fruit, those cylindrical wafers with the chocolate swirl around them, mini merangs (excuse spelling....it's late). Honeycomb is also nice - do not open in advance as the air makes the honeycomb go hard after a bit. (You make your own Violet Crumbles!!)
If the fountain ceases to flow properly this could be due to food that has fallen off the skewer and been sucked up (it will be in the bottom basin at the vents where the chocolate should get sucked up). Get a skewer and go fishing for wayward bits and pieces.
If people go in hard, it is recommended to have glasses of water readily available.
Enjoy!
PS. Wet Ones/baby wipes are recommended to be on hand also.
