Why is it that stews and curries and casseroles taste better the next day?

I made a delicious beef and red wine casserole in the slow cooker yesterday and am having the leftovers for lunch and it tastes even better today :D

because the flavours have more time to infuse ... if that makes sense? That's what I think anyway.

When I used to entertain the ex's colleagues etc. and was making a curry, casserole or the like, I always made them the day before. Saved time and they also tasted better.

Because it gives time for the combination of ingredients to fully penetrate the food. (From visiting manfriend that once owned/ran a restaurant....'spose we should trust him! ha ha)

As above :D We usually make it the day before too - for that reason. Although, I've recently bought a (rather pricy) Tupperware dish that goes in the microwave and the oven. You cook the roast, casserole or whatever on high for 10 or 20 minutes (depending) then into the oven for the remainder. I thought "As if!" but liked the idea of a dish that could go in both and we needed a baking tray, etc.... Anyway, it actually works! And the food tastes sensational and you can do casseroles the same day with cheap meat and it is always tender!!! Love it :)

Corned beef is always better the next day on a sanger too for the infusion reason. :D

You can get around it by marinading your meat overnight in the ingredients and then it tastes just as good first time around.

I was going to suggest the same thing although BiLo lately has quite small pieces. I even picked up a mini lamb roast a few weeks ago that was just perfect for two of us. They seem to be catering more for people who only cook for 1 or 2 these days. One of the corned beefs I saw was only 600g which I think would be okay for one person with leftovers. :D
