oh oh, yes me too...I love them, haven't had them since I was a kid. My Dad used to make them with left over lamb from a baked dinner and they were :d:

OMG me to, i know I'm ancient compared to you 2 lol but my GF mum made them for me about 4 yrs ago i just hav'nt made them myself i love them

what kind of corn fritters, I thought you meant corn as corn on the cob, but when Leigh said her dad made them with left over lamb I am now thinking maybe you mean corn meat fritters
Anyway this is how I make mine

just make a batter
a little flour, tsp baking powder, pinch of salt, 1 egg
any kind of batter, then I put a can of creamed corn a little finely chopped onion and either a little drop of sweet chilli sauce or Tabasco sauce but not necessary
heat pan with little oil and put in spoon lots flip when you see bubbles popping through, I turn the pan down as they tend to burn

Zucchini (grated) and red pepper (finely chopped) are great in the mix also.

No Old Di apart from 3 good meals a day & my washing & ironing kept up with I should be happy oh & would you take as much care with making my bed as you do your own WEE bed thanks

I don't believe this....have just made some which we have had with pork chops for dinner.....had some left over peas and corn form last nights dinner.

All I did was put some SR flour in with some milk (I used soy this time) and one egg and the left over peas/corn. Add some curry powder and combine. Mixture should be firm but slightly runny.
Leave for about half an hour.
Heat some oil in a frypan, and when very hot, ladle some mixture...doesn't matter if a little runny, just work pushing from outside in until set. Turn over to cook the other side.
Drain on paper towels.

These were lovely....I think the best I have ever made.....the TT asked for more (that in itself is remarkable).
Talk about coincidence!

oh my goodness! I don't have a recipe, but last night i went out to dinner at a seafood restaurant and one of the sides on our meal was Jalepeno corn fritters and they were sooooooooooo good!!! It was the first time I had ever had them and they were great!

I love corn fritters and make them all the time but I normally just throw everything in together and don't normally follow a recipe but I managed to find this one on the net that is basically what I make.

That's the beauty of these....they can be made from anything...and Iagree with Leigh....put some chopped up cold Lamb in.....:d: :d:

I make corn fritters with a
tin of corn kernals
tin of creamed corn
chopped onion
SR flour
I use the corn liquid instead of milk
diced bacon

I mix all together and only add the corn liquid if I think it is needed...I fry then in a little oil and a dob of butter, then I drain them on paper...Hmmmm now I feel like corn fritters...
