Currently I am eating avocadoes and jam sandwiches. It goes really well together.
Ladies, I need ideas on what goes best together with avocadoes. Simple meals will do for me, so please don't suggest anything fancy that I cannot whip up (as I really can't cook).

Yeah I think they are classified as a fruit because they have a stone inside, and they are really good for your skin but are really fattening, so I have been told.
How about Gaucamole? It's pretty good.
NGREDIENTS
* 3 avocados, peeled and diced
* 1/2 tomato, finely diced
* 1/2 onion, finely diced
* 1/2 habanero or jalapeno pepper, finely diced
* 1 clove garlic, minced
* Dash of lime juice (I have used lemon juice)
* Salt to taste
DIRECTIONS
1. In a bowl, mush avocados until slightly chunky.
2. Add tomato, onion, peppers, garlic, lime and salt. Mix together.
3. Serve immediately with tortilla chips, vegetables or pita bread.

About the fat content: Avocado cholesterol diet is beneficial for lowering cholesterol, despite of avocado fat content and carbohydrate. The reason is that avocado is a great source of heart-healthy monounsaturated fat. The avocado fat is a type of fat that may actually help to raise levels of HDL ("good"cholesterol) which actually protects arteries, while lowering levels of LDL ("bad" cholesterol).
In case you are not familiar, HDL or the good cholesterol is the one that cleanses the arteries from the LDL or bad cholesterol build up. So, it flows naturally that the higher the HDL/good cholesterol the less is LDL/bad cholesterol.

Easy peasy Chau....
Line an oven proof dish with corn chips.
Open a can of 3 bean mix, rinse really well.
Mix with a chopped avocado.
Pour over some Taco sauce.
Top with grated mozzarella cheese.
Bake in moderate oven for 10 minutes.
Put a dollop of sour cream on top.
Eat with fingers and plenty of napkins.
Heather that sounds good too. Is it sort of like Nachos?

Yes....I often have it when a GF pops in for lunch on her break....tho' at the moment I use the microwave...because the oven has died.

you really need to go buy a live oven H
My DD is highly allergic to Avo's but i love them in toss salads & i like them on a wrap with ham cheese tomatoes & pinapple then toast on flat grill

Oooh yes....yummy.
I have slices on avocado with ham, Swiss cheese and roasted capsicum and toasted in the sandwich press.

I love avocados and quite often have it in place of butter or marg in sandwiches or rolls. Its yummy on toast with vegemite, on crackers with cheese and tomato, in salads, with prawns as a salad or cocktail, with chicken,basically I put it with anything:D

Simple recipe? Can't get simpler than this. :D
Fresh loaf of bread
Kilo of prawns
1 avocado
Salt and pepper to taste
Seafood/Thousand Island dressing
Slice bread
Peel and de-tail prawns
Scoop out avocado and try to mash it up a bit so it forms a paste
Spread paste onto bread thickly
Arrange prawns on top of avocado and drizzle with dressing
Eat it as an open faced sandwich or as a closed one, either way tastes just as good. My mum used to put ham on top of the avocado, then the prawns and then top with cheese and grill it but I never liked it that way - it just tasted wrong. The seafood dressing is a better way to go for me but it's up to your tastebuds. :D

Avocados are my favorite! I eat about one a day. They are high in fat, but it is the best fat for your body.
I usually toast a piece of bread and then spread creamcheese and Avo on top. yum! My son loves it.
I eat tons of guac, right out of the bowl!
Make a quesadilla and put avos in in.
Take two tortillas and in between them pyt your favorite shredded cheese. I use colby jack. You can even add shredded cooked chicken. Then place on skillit and warm both side till cheese is melted. top with avos and sourcream.
The cheesecake factory makes the best avocado eggrolls with sundried tomatoes in them.
Or you can slice the avo in half and eat with a spoon. No cooking involved
I have avacado on just about everything. I can't get enough of it!

Avocadoes are my favorite. Real simple recipe: dice Avocadoes and add a jar of salsa.
