I made this the other day and it was just beautiful with a little dollop of ice-cream.
INGREDIENTS
2 cups sugar
1/3 cup butter
2 cups all purpose flour, sifted
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 cups fresh or frozen raspberries
2 cups boiling water
METHOD
Preheat oven to 350°F.
Cream butter with 1 cup sugar.
Add flour, baking powder, salt and milk. Mix well.
Pour batter into a 3 quart baking dish or pan.
Sprinkle berries over top, distributing evenly. Sprinkle remaining cup of sugar over all.
Slowly pour boiling water on top of this. DO NOT MIX OR STIR.
Carefully place on center rack of preheated 350°F. oven and bake until the top is golden brown, about 50 minutes.
When done, the top will be a delicious white cake with blackberry pudding sauce on the bottom. Using a large serving spoon, serve in bowls topped with fresh whipped cream or a scoop of vanilla ice cream.
