I made this recipe last week when my nephew came over for dinner and it was really delicious.

Chilli Squid Salad

8 small squid tubes
6tbs flour
1 tbs szechuan pepper
pinch of sea salt
2 teas chilli flakes

Dressing

3/4 cup rice wine vinegar
1/4 cup sugar
1tbs of lime juice
1 large chilli, seeded and chopped
1 tbs ketcup manis

Salad

1 red capsicum, finely sliced
2 stalks of celery, finely sliced
2 shallots, finely sliced
1 cup of bean sprouts
10 mint leaves, finely shredded


Combine the rice wine vinegar and sugar in a small saucepan and heat gently until all the sugar has dissolved, then boil rapidly until mixture has reduced by half and remove from heat. Add the lime juice, chilli and ketcup manis and mix well and then set aside to cool.

Clean squid tubes and cut open. Score the inside of the tubes and then cut into 2-3 inch square pieces. Mix together the flour, szechuan pepper, sea salt and chilli flakes and coat the squid well and deep fry for 1 minute or until golden.

Combine the salad ingredients, squid and enough dressing to coat. Serve immediately.
