Hey, thought I would post a couple of the recipes from my website!

Shredded Beef Nachos

Makes: 4 serves
Cooking: 2 hours

800g beef chuck steak
400g tin tomatos
½ cup red wine
1 cup beef stock
1 tbs olive oil
2 tbs chilli seasoning mix
2 fresh red chilli’s, seeded and sliced thinly
200g corn chips
400g tin kidney beans, drained and rinsed
120g shredded mozzarella cheese
8 tbs refried beans
4 tbs guacamole*
4 tbs sour cream
4 tbs salsa

*Guacamole
2 small ripe avocados
1 tsp lime juice
1 tbs sour cream


Chop beef steaks into 2cm cubes. Heat olive oil in large pan over high heat. Add the beef, stirring for 3 minutes until beef cubes are browned.

Add chilli seasoning and stir for a further 1 minute to coat beef. Add red wine, beef stock, tomatos and chilli. Bring to the boil.

When mixture boils, cover pan and turn heat down to a slow simmer for 1.5 hours, stiring occasionally.

Using two forks, pull beef cubes apart into shreds. Stir through kidney beans and simmer for a further 10 minutes.

Divide Corn chips between 4 plates and top with shredded beef. Sprinkle over mozzarella cheese and place under grill until cheese is melted.

Top each plate with refried beans, sour cream, guacamole and salsa.

*To make guacamole, place all ingredients in a small bowl and mix until well combined.

By the way - this meat can be used for any mexican dish - buritos, tacos etc. Is so yum!
