Penne with Chilli & Bacon

Makes: 4 serves
Preparation: 5 minutes
Cooking: 10 minutes

300g penne
800g tinned chopped tomatos
3 rashers bacon, rind removed and chopped
1 medium red chilli, seeded and sliced
¼ cup red wine
1 tsp crushed garlic
1 tsp brown sugar
½ cup fresh basil leaves, chopped
salt and pepper to taste


Cook pasta in a large pan of boiling water according to producers instructions or until just tender.

Spray large pan or saucepan with cooking oil and fry garlic, chilli and red wine on a medium heat for one minute. Add bacon and cook for 2 minutes, stirring continually. Stir in chopped tomatos and sugar and simmer slowly for 5 minutes.

Combine pasta and sauce. Add salt and pepper to taste. Just before serving, stir through fresh basil leaves.

Top with freshly grated parmesan cheese if desired.
