Choc Orange Cake
Makes: 8 serves
Preparation: 10 minutes
Cooking: 45 minutes
125g butter chopped
2 tsp grated orange rind
1 cup caster sugar
2 eggs
½ cup milk
1¼ cups self raising flour
¼ cup cocoa
¼ cup orange juice
Orange Icing
1 ½ cups icing sugar mixture
1 tsp grated orange rind
30g softened butter
1 ½ tbs orange juice
Preheat oven to 180°C and grease a 20cm round spring form pan.
Combine all ingredients in bowl and beat with an electric mixer on low until all ingredients are combined. Then beat on medium speed until mixture is smooth. Pour mixture into prepared pan.
Bake in oven for 45 minutes or until cooked through. (To test, slide a clean knife into the thickest part of the cake. If it comes out clean, the cake is cooked.)
Turn onto a wire rack and allow to cool.
When cake is cooled, top with Orange Icing.
To make icing: Combine sifted icing sugar, rind and butter in small bowl. Stir in enough juice to give it a spreadable consistency.
