Okay ladies here it is :jump:

CHOC CHIP PIKELETS :jump:

1 egg lightly beaten
25g unsalted butter melted
2/3 cup milk
2 tbsp castor sugar
1 tsp vanilla essence
1 cup self raising flour
1/2 cup choc chips


STEP 1 Whisk egg, butter, milk, sugar and vanilla in small bowl until combined. Sift flour into medium bowl and gradually whisk in egg mix until mixture forms a smooth batter. Stir in choc chips.

STEP 2 Heat a large pan over medium heat. Brush base with a little extra butter. spoon 1tbsp of batter into pan and repeat to make 4 pikelets. Cook until bubbles appear on surface then turn over. Repeat with remaining mixture.

STEP 3 Serve the pikelets sprinkled with cinnmamon sugar.

HINT Can be made up to 2 days ahead or frozen for up to 2 months.

I added extra milk and choc chips didn't need the extra milk. They are yummy hot but don't burn your mouth on the choc. Let the butter cool down a bit or the egg will scramble LMAO LMAO LMAO

Ok going to try these tommorrow. I cant today one of my daughters has just made scones. So thats our treat for today. I'll let you know how the kids like them...

Ohhhhhhhhhhhhhh wow they are sooooooooooooo yummy. I'm eating a couple at the moment. This is such a great receipe. Do you think to make a choc batter I could add some cocoa? Or would that just muck it all up?

give it a try but don't use to much. or maybe if you want to be realy naughty some melted real chocolate let me know how it goes

I just made these but I put some melted chocolate through the mix as well and they were soooo yummy!!!

I just made these again and I double the recipe but forgot to double the sugar so they were not as sweet. I did half the mix plain and on those i put lemon and sugar. It brought back so many good memories of when my dear old dad used to make pancakes for late night snacks(after tea and desert). We would all be sitting there with lemon juice and sugar running down our arms and enjoying every moment. Just thought I would share that with you all
