Winter is coming (for those of us in the Sthn hemisphere, lol) ... and I've been reading about soup on another thread so I think all you domestic goddess - types should give us your favourite soup recipes so we can all enjoy them :)

Here is our favourite
Chunky Lamb Shank & Barley Soup
4 Lamb Shanks
1/2 cup barley
4 beef oxo cubes
tin crushed tomatoes
4 sticks celery
4 carrots
1 onion
3 small potatoes (or 2 large)
1 turnip
1 parsnip
2 zucchinis
(you can use any vegetables really - it's up to your own taste)
- Place shanks, stock cubes, barley & approx 1.2 - 1.5 litres water in a pot & leave to simmer.
- While simmering, cut up all vegetables (except potato) into small cubes & add to the pot stirring occasionally.
- Leave to simmer for approximately 1 hour.
- After 1 hour, remove the shanks.
- Remove all meat from the shanks & cube.
- Cut potato into small cubes put into pot with cubed meat.
- Let simmer for approximately 45 minutes or until potato is cooked.
Barley should be soft enough also.
Serve with warm crusty bread rolls :D
Vegetable and Chicken Soup.
1 Leek
2 Medium Carrots
1 Zucchini
2 Sticks Celery
2 Tbsp Olive Oil
6 Chicken Drumsticks (skinless)
3 Thin Slices Ginger
About 2 Litres cold Water
6 Tbsp Chopped Parsley
Freshly Ground Black Pepper
A Little Salt
Cut the leek in four lengthwise, leaving the root intact. Wash leek thoroughly to wash out any grit. Slice leek thinly.
Peel and slice carrots
Slice Zucchini and Celery thinly
Heat oil in a large saucepan on medium heat. Gently fry leeks, carrot, celery and zucchini for 4 minutes.
Add chicken pieces, ginger and water, and season with pepper. Return to the boil.
Make sure the vegetables and chicken are well covered with water. Simmer for 25-30 minutes until the chicken is cooked. Serve with parsley.

This is a good idea. I don't have any recipes, but I will be pinching some of these if that's alright with everyone.
