Does anyone know the recipe for home made Bailey's?
My mum use to make it but I've lost my recipe.

I have got two different recipes - I haven't made it myself but you could try these:

1 cup Scotch whisky (cheap is fine)
1 tin evaporated milk
1 tin condensed milk
1 cup hot water with 1-2 tablespoons of coffee (add to taste)

Add all the ingredients to a well-sealed container and store in the fridge. Shake the container daily. Try to not devour the drink before it is seven days old! Yes, it can be drunk earlier, but tastes much better after a week. The weight conscious can use low-fat milk.

If you want to make a bigger batch you could try this:

1 bottle scotch whiskey
600ml cream (home brand thickened cream works fine and cheaper)
2 tins condensed milk (440grm or as I have found even nicer and cheaper 3 –325gm home brand cartons)
6 tablespoons chocolate topping
3 teaspoon coconut essence
5 whole eggs
5 egg yokes

Mix the eggs, cream and condensed milk first to help make sure the eggs were well mixed (no lumpy bits) then added the other ingredients leaving the scotch till last and using it to rinse out all the cream out of the container mix really well.

Taste the mixture & add extra choc topping if you like to suit your personal taste.

Strain into a jug to make sure there are no lumps and bottle into sterilized bottles

REFRIDGERATE & ENJOY the next day

Thank you. Sounds really nice. I don't think I can drink it because it has gluten in the Whiskey, but my daughter can.

A friend of Mum's was for ever making, I forget how but think it would have been similar to the first of Barbs.
Do they still make those alcholic essenses?

Just had a looky, yes they do ibrew (http://www.ibrew.com.au/html/spirits/spiritset.html) Has anyone tried those? We had one years ago for sambuca but I was never game to make it LOL

We used to have a local shop - I think it was called the Brews Brothers :Hehe:

I am pretty sure they closed though after a young local boy died after drinking too much essence. Not sure if they sold it to him but there was a huge uproar in the community about how easy it was for young kids to get hold of the stuff. It was really sad - they have a local footy match in his memory.

What is essence? A type of mixed drink?

The essence is the flavouring sorta thing for whatever alcohol your making. At least that's what I think it is. You make up the straight flavouless alcohol and add what ever flavour essence you want, ie, baileys, rum, bourbon, whiskey and such.

I haven't had the money to buy the ingredients yet...I'm getting money through from ebay sales tomorrow or the next day, so I'll be doing it then. Yeah I'll let you know how I go.
