I have misplaced my Great Grandmothers recipie for hot cross buns
[and as yet have not found one to match it. I would be very greatfull for any suggestions. Many Thanks
This one comes from the Food & Wine section of the Canberra Times this week:
4 cups plain flour
1 tsp mixed spice
1 1/2 tsp cinnamon
1 tsp salt
60g butter
1/2 cup castor sugar
1 packet (7g sachet) dry yeast
1/2 cup lukewarm water
1/2 cup lukewarm milk
1 egg (lightly beaten)
3/4 cup sultanas
Sift the flour, spices, and salt. Rub in the butter, stir in the sugar and yeast. Pour in the water, milk and egg. Mix to a soft dough, knead on a lightly floured board until it becomes quite elastic (takes about 5 minutes). Then knead in the sultanas. Try to distribute them evenly. Place in a greased bowl and cover lightly.
Leave in a warm place for about 1 1/2 hours until its risen to about twice its original size. Turn out on to a floured board and pat into round shapes. Place on a greased baking tray, cover and allow to rise for another 30 minutes. Brush with egg white and bake for 15-20 minutes (although oven temp is not specified, I would say about 200C??).
When the buns are baked, they look good brushed with a glaze, made by heating 1/4 tsp gelatine, 2 tbsp water, and 1 tbsp sugar. Leave the buns in the oven to dry with the door open for a minute or so. When the buns are cool, make crosses with white icing (2 cups icing sugar & about 1 tbsp hot milk).
