I am looking for a recipe for scones that uses whipped cream, flour, etc in the mixture. Apparently it's a Donna Hay one but I can't find it. Does anyone please have it? Oven pre-heating as I type!!!

Jess I just googled cream scones donna hay and came up with lots of sites.:D They sound yummy let us know how they turn out.:D

I bought some Tupperware on Ebay and the seller popped in a few recipe cards and one of them was for scones that have cream in the mix...

3 cups S.R. Flour
2 tsp baking powder (optional)
2 tbs icing sugar
200mls thickened cream (18-35% milk fat)
125mls cold water
Plain flour for dusting
jam & cream for serving

Place oven rack in the top third of the oven. Preheat oven to 200 degrees celcius (fan forced).

Sift flour, baking powder and icing sugar into a large bowl. Add cream and water and cut and fold the mixture until it forms a ball. Turn onto lightly floured board and knead lightly until mixture is just smooth and slightly springy. Do not overwork the mixture.

Cut the dough into the desired shape and place on lightly dusted tray. Bake for 15 mins or under golden brown.

I have actually located the recipe myself, (yes, it was becoming an obsession...) so here it is for anyone interested. It's AMAZING..... Definitely NOT for every day consumption!

Pre-heat oven to 180C.

Whisk 2 1/2 cups of whole cream to soft peaks.

Sift over it 3 cups plain flour and 3 teaspoons baking powder.

Add 2 tablespoons castor sugar.

Stir together carefully.

Press out dough and knead lightly.

The mixture forms about 8 decent-sized scones.

Brush tops with milk.

Bake 15-25 minutes (watch them, bigger ones need to be cooked through, depends on your oven).

Slather with good quality jam and more cream. Mmmmmm.
