Does anyone have an authentic Australian dessert recipe? Cake, cookie, pudding, ice cream, anything. I luv to try new recipes, and the only Australian one I have is for Anzac biscuits, which by the way are really good.

I don't have recipes but I'd say pavlova (merangue base with cream and fruit on top) and lamingtons (plain cake coated with chocolate icing and coconut). I'm sure someone has recipes ....

Pavlova would have to be one of my favourite desserts....yummm!!!!

You can vary the pavalova as well.
When it's all mixed up and your about to put it on the tray to cook, you can fold through 1 cup of toasted coconut or 1 cup of grated chocolate.
I love the coconut one, it's beautiful.
Also instead of making one big one, you can put individual ones, so you can serve them individually.

Help.. I am making the lamingtons.. They are ready to go in the oven.. The recipe says moderate oven what temp is that..?

Thank you again!!! When I turn my oven on it automatically sets at 350.. I was leaving it till there I got a response...

Cool.. I am so excited to make these. I luv trying new recipes. It was fun coverting.

i've come across two recipes that you might like; first one;white christmas.2cups of rice bubbles,1 cup mixed fruit,3/4 cup icing sugar,1 cup coconut,1 cup powdered milk,250 gram copha, vanilla essence. mix all the ingredients together, except the copha,melt the copha,add tha vanilla,and pour over tha mixture. mix well toghether,press into a greased flat tin,set in the fridge, then cut into squares or fingers, store in the fridge.
the second one is; rum balls,
i single sponge,1 tablespoon cocoa,1/2 cup almond meal,1-2 tablespoons rum,1/4 cup apricot jam,1/4 cup coconut,shredded. make cake crumbs in a processor, then place in a bowl, add almond meal,cocoa,rum and sufficient apricot jam to bind the mixture. shape into small balls,and roll in coconut, place on waxed paper and stand until firm, store in fridge. hope you have fun making them,let me know how you go.

The Lamingtons came out great!! At least I think they did, I dont have anything to compare them to. I took them over to the neighbors, they love them I made over 30. I took some to another neighbor because out neighborhood is having a bake sale in the morning, so she could sell them to earn $$ for the community garden.
There were actually alot of steps, I had to make self rising flour and dirtied quite a few dishes, but it was worth it. I know my mom would love them, but I don't know when I will see her.

Helen, thank you for the other recipes, I will have to make those next.

I made choc chip cookies also for hubby, he has been asking and was a bit angry I made the lamingtons first. (he doesnt eat coconut)

You had to make self raising flour? Can't you just buy it ready made? (Actually, I wouldn't have a clue how to make it, you clever girl!) I'm glad they were a success, I love lamoingtons but I'm off all that refined sugar now :crying:

I made it because I didn't want to run out to the store,again!!!:P :P
I have never looked for it.. maybe we sell it. I just googled it and found a recipe.. It was flour, salt, baking powder..

It was fun, I luv cooking and it keeps me busy. My son helped mixing it with the electric mixer.. And today we made cookies and he cracked and opened an egg. I just had to guide his hands.. not bad, He can cook better than my hubby now!

Yeah I just use plain flour and baking powder, dont add salt.

Not really australian but wine trifle at xmas is the next best thing to chrissy pud
1 jam rol cut into slices
place in bowl and drizzle port over acording to tast. I usuall use fruit juice though one has to remeber .05 or .00 for drivers.
a samll tine of fruit salad. drain prtially so the cake is not too mushy
set custard poured over the top.
whipped cream over the custard
you can then add jelly over the topp which has had a fork run through this prior to setting or use strawberries or lightly toasted almonds.
Most people do enjoy this but l do think that it is of english origin

Yes, I'm pretty sure trifle is English, DHs Granny always makes it for us when we go over there - hers is the only trifle I will eat, I don't like jelly but her trifle is out of this world.

Naomi you add 2 teaspoons of baking powder to 1 cup plain flour and sift several times.easy peasy. brownie arebetter if you do it that way but cakes i use self raising
