Is someone able to give me a good recipe for pikelets?

I am very good at pancakes, but my girls love pikelets and I have resorted to buying them from the supermarket already made.

I used to have a great recipe for them in the Woman's Weekly Baby & Toddler Cookbook, however I cannot find the book now, as I think I lent it to a friend.

I know pikelet batter is a bit thicker than pancake batter, but you are not supposed to get bubbles in them when you cook them, like you do with pancakes.

They are a great snack to put in lunch boxes and for after school and easy to cook with the children as well.

Piklets out of my good food for babies and toddlers book,

1 cup (150g) self raising flour
2 tablespoons caster sugar
1 egg, lightly beaten
3/4cup (180ml)milk, approximately

Combine flour and sugar in medium bowl; gradually whisk in egg and enogh milk to make thick, smooth batter. Drop dessertspoons of mix into greased heavy-base pan; cook until bubbles appear on surface of piklet, turn, brown other side. serve with yogurt and a little stewed or pureed fruit, if desired, or drizzle of maple syrup.
Makes about 20
storage airtight container up to 2 days

Oooooooh I have that book too. I love it, it has sum yummy receipes in it.

my pancake & pikelet recipe are the exact same i just make either big ones or little ones :)

I'm the same as you Tina.:D I think mine just came out of the CWA cookbook.

4 tbls S/R Flour
2 tbls sugar
1 Egg
and just chuck in enough milk what ever you reckon:jump: I never measure
vanilla essence


I use to throw in a little Tia Maria or Kahlua before I had kids :jump:

I also like to put cut up stawberries on the gooie side before I flip them.:d:

is noone going to mention my choc chip ones. the recipes in here under With Love from Mamma. you don't have to put the choc chips in them, my varooka likes them plain. One of the ladies(can't remember who) put some melted chocolate in the mix and said :d: :d: :d:

That was me.....and yes they were really yummy. I've made them twice now and everyone has loved them. You only need to melt about 1/3 cup of choc buds.

Oh they are Alexa. I forgot to buy choc chips when I went shopping last week so I have to wait til this week. It's on the top of my list though lol

speaking of chocolate i just had two bakers delight hot cross buns! yuuuuummmmmmmyyyyy! i taost them under the griller in halve hen butter them yummy! anyone else like them?

I love the bakers delight choc chip hot cross buns they are so yummy and melt in your mouth. :d:
