My grand father has just harvested his monster pumkin crop (37 pumpkins from his backyard vege patch)
I am really surprised at how lfew recipes are around for pumpkin.
Any ideas? It seeems such a waste not to use fresh picked from the garden veges.

Pumpkin bake is really nice - you just make it the same way you would make a potato bake :)

Homemade Pumpkin soup (obvious one I know, but it's yummy :))

Pumpkin Gnocchi is delicious as well

I don't suppose that you don't know how to make Pumkin Soup....give a hoi if you need any recipes.

Heather if you have any recipes for pumpkin soup please send them my way.
I have never actually made soup before and i want to start stocking up for winter.

OMG pumpkin scones, i hav'nt had them for about 2 years when mum made a batch.
my darling old nan used to make them too & i love pumpkin soup & you can freeze the soup too Ez

Ez....couldn't be simpler....but I am sorry about the lack of exact measurements.

Pumpkin Soup

Melt a large pat of butter and cook finely diced onions until transparent (do not let them burn).
Add chopped pumpkin and enough stock (chicken or vege) to cover.
Bring to boil, reduce heat, cover saucepan and let simmer until pumpkin is soft and mushy.
Blitz either in the pot or in batches in the blender until smooth.

Now in the past I have added garlic or curry powder to the onions. I have added nutmeg before the final blitz....or cream or milk sometimes even coconut cream.
If you roast the pumping first and chop when cool, that is a beautiful taste.
I like my pumpkin soup to be really thick so tend to be a tad stingy with the stock.
Must also add that Queensland Blue or CAP make the sweetest, best soup.....use Butternut if your tastes run to the slightly bitter.

Heather - do you think it would work in a slow cooker? BTW they are queensland blue pumpkins that he grows and they are the yummiest I have ever tasted.

Gina - could i possible get the recipes for the pumpkin bread, soup and curry? thanks in advance

Ezmay I made sweet potato soup in my slow cooker and it turned out fine so I can't see why you couldn't do it with pumpkin :)

Yah! Give me a day or 2 to find it, and then I will post it. Do I need to convert the measurements or can I post it with cups, tablespoons..ect..

Pumpkin Bread

2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 cups shredded fresh pumpkin
1 cup toasted pumpkin seeds

Preheat the oven to 325 degrees F.
Sift the flour, cinnamon, baking soda, baking powder, and salt together.
In a separate bowl, mix the sugar, vegetable oil, eggs, and vanilla. Combine both mixtures and fold in the shredded pumpkin and pumpkin seeds. Once the ingredients are all incorporated pour into a non- stick 9 by 5 by 3-inch loaf pan. If your pan is not non- stick coat it with butter and flour.
Bake for 1 hour and 15 minutes. At this point a knife inserted into the middle of the loaf should come out clean. Cool for 15 minutes and turn out onto a cooling rack. Cool completely. For muffins temperature should also be 325 degrees F., but bake for 30 minutes.

THankyou for the recipes. We had pumpkin soup the other day and i judt got another pumpkin last night so i will attempt to make the bread next

I always grate a couple of cupfuls of pumpkin to put in my bolognaise sauce. When veggo, my pasta sauce had a pumpkin base - we named it "Happy Sauce" because that is how you felt when you ate it! ha ha - bloddy hippies!

Of course, there is some nation in the world that swears by pumpkin pie also...
