I have a hot house full of apple cucumber, and don't know what to do with them, first time I have ever growen them, can't seem to find a recipe for a relish or chutney or something don't want to waste them :help:

What about pickling them Di? Also a lovely side dish my Nan used to make to have with salad...sliced tomato, cucumber and red onion...in a dish covered with brown vinegar add sugar to taste....soooo yummy!
I will have a look and see if I can find any recipes for pickles or relish for you :)

I've never heard of them so I'm going to 'Google' an image to find out what you're talking about.

Oh they are very nice to eat Beverley and I think they have a lower acid content than normal cucumbers.

Pickled sweet and sour cucumbers
2-3 cucumbers (about 600g)
3 tsp cooking salt
1/2 tbsp caster sugar
1 tbsp white wine vinegar
1 tsp chilli oil, or to taste
Toasted sesame seeds
Remove the cucumber wax with a soft brush. Halve the cucumbers lengthwise, remove and discard the seeds. Cut the flesh into 2cm chunks. Sprinkle with salt and let stand for 45 minutes. Transfer to a colander and drain for 10 minutes.
Combine the cucumber with the sugar, vinegar and chilli oil. Cover and refrigerate. Serve within 2 days, as the cucumbers will lose their colour and crispness. When ready to serve, sprinkle with sesame oil and sesame seeds to taste.
Makes about 4 cups.

I'm going to be looking for cucumber recipes shortly, we have many vines growing at the moment and all are in flower!
I just eat them as they are
