I thought it would be nice to have a vegetarian recipe thread. I have been a vegetarian for 20 years. (I do eat seafood)I used eggs in baking but do not eat them by themselves. I luv dairy, but I dont drink milk. I do not use or eat any beef or chicken stock. I always have to ask at the resaurants. You would be surprised how many things have a chicken stock.
It was very difficult when I was younger. There were not any vegetarian friendly restaurants. Now there are lots of Vegan palces.
I used to have Sunday feast at the Hari Krisna temple.
My dad and grandpa were both chefs so that help with my meals at home.
My son is a veggie too. He can decide later when he is older. Hubby is a carni.

This is great for cold rainy days
MUSHROOM AND HAZLENUT SOUP
2 tablespoons stick butter
3 cups sliced mushrooms
1/4 cup ground hazelnuts
2 1/2 cups vegetable stock
2 cups milk
1/4 teaspoon ground nutmeg
3 tablespoons light cream
salt and freshly pepper to taste
Melt the butter in a large saucepan, add the mushrooms, and stir over a medium heat for 2-3 minutes, until the juices run. put the lid on the pan and simmer gently in juices for 5 minutes. Take out 2 tablespoons of the mushrooms for garnish later.
Stir in the hazlenuts into the mushrooms in the pan, then add the stock, milk and nutmeg and season to taste. Cover pan and let simmer gently for 10 minutes.
Process the soup in a blender or food processor untill smooth. Return the rinsed out pan, srtir in the cream and reserved cooked mushrooms and reheat gently until piping hot, not boiling. Adjust the seasoning to taste.

I am a vegetarian (no chicken or seafood) and have been for 15 years. I will see what receipes I can find for you.

my youngest daughter and I don't eat meat either, but not for any speacial reason, just don't like it, also we owned a farm and husband killed our own meat that kinda put me off, think my daughter just coppied me as she was only a baby when I stopped eating meat, I do worry over her though, like her Iron levels, as she is not good on vege as well, me I love them

I eat dairy products (ie am not a vegan) but dont eat any meat or fish at all. If you give it up as Di Nana said and dont eat healthy you do have to watch your iron levels - I know when mine have dropped by the way I feel - but it doesnt take a lot to boost them up again.

Brown Rice Tart with Tomato Filling
Base:
1 cup brown rice
1/2 cup cheese
1 egg
Filling:
6 tomatoes, halved
6 cloves garli, unpeeled
1 tablespoon oil
Black pepper
Fresh thyme sprigs (if available)
50g feta
3 eggs
1/4 cup milk
Cook rice. Set aside to cool. Preheat oven to 200c. Place rice, cheese and egg in bowl and mix well. Spread mix over the base and sides of the quiche dish. Bake for 15 minutes.
Place tomatoes and garlic on tray. Brush with oil and sprinkle with pepper. Bake for 30 minutes. Remove skins from garlic. Reduce oven to 180c. Arrange tomato, garlic, thyme and cheese over the crush. Place eggs and milk in bowl. Whisk and pour over tomatoes. Bake for 1 hour.

Chickpea Curry
2 onions
4 cloves garlic
1 teaspoon chilli powder
1 tablespoon oil
1 teaspoon salt
1 teaspoon turmeric
1 teaspoon paprika
1 tablespoon cumin
1 tablespoon coriander
2 cans chickpeas
1 can tomato pieces
1 teaspoon garam masala
Slice onions. Crush garlic. Heat oil and cook onion and garlic over heat. Add chilli powder, salt, turmeric, paprika, cumin and coriander. Add chickpeas and tomatoes. Stir. Simmer covered for 20 minutes. Stir in garam masala and simmer for 10 minutes.
Serve with rice or pasta.
Note: Just use whichever of the herbs you have in your kitchen and adapt to taste.

Lentil Pie
1/2 cup tomato paste
1/2 stick celery
1/4 cup grated carrot
1/2 cup spinach
1 cup cooked brown lentils
1 clove garlic crushed
1 potato, peeled and chopped
1/4 cup vegetable stock
Plase pasta sauce in a saucepan and heat. Add celery, carrot, spinach, lentils and garlic and bring to boil. Reduce heat, cover and bring to boil. Reduce heat, cover and simmer. Cook potato. Mash with stock. Season lentil mix with salt and pepper. Top with potato.
Delicious!

Pumpkin Pasta
Spinach 150g
Pumpkin 700g
Feta Cheese 250g
2 onions
Lemon Juice
Garlic
Pasta
Vege Stock
Saute onions with garlic. Add diced pumpkin and 3/4 cup vegetable stock. Cover and simmer until pumpkin is tender. Add spinach and feta cheese. Stir until combined. Spring with lemon juice and serve over warm pasta.

ur not missing anything. One day she was on and I couldn't find the remote, and she was making something with oranges. Well she spont most the time going over all the different kinds of oranges, and of course for her recipe you needed some unheard of orange onle found in some remote rainforest atop of mt everest!
