Do you add something to a dish that is unexpected and makes quite a difference to the everyday taste of food?

I don't know if you'll find any of these strange:

I add a little Dijon Mustard to homemade egg mayonnaise.
A decent teaspoon of curry powder is added to my homemade hamburgers. You wouldn't know it's there.
I put raw sugar in my meat sauce for pasta....er, and half a bottle of red wine to make it quite rich. A merlot or a shiraz does the job!

Grated granny smith apples in the mixture for homemade sausage rolls, I also put a touch of curry powder in homemade hamburgers. There's other things I do but I can't think of them at the moment.

crushed chilli in lamb-burgers
vegemite into stews
nutmeg into whitesauce

can't answer for myself as i am the worst cook in the universe, but my husband puts all kinds of things into his cooking.. from cinnamon to dark chocolate to lime juice.. i have stopped asking him what his 'secret ingredient' is..

My secret ingredients are usually included in the pre-prepared mixes and bottles I use :P

Marinate chicken breasts in orange juice. And use garlic at every opportunity. (Not before going out in public, though.)

LOL I should get one ... except everyone would know it wasn't true, because I don't cook :hehe: (although I am very good at drinking wine while someone else cooks!)

There was even an article today in the SMH Good Living on top chefs doing just that.

I add seeded mustard to egg mayonnaise Kekka. It does give it that something special.

I also put nutmeg into white sauce.

Apart from that, if I am missing an ingredient for a recipe I tend not to panic and substitute if I can. Unless it's something major of course, like the meat or chicken!

I do the same thing Red - Hubby & the kids love them (although I haven't made them in ages LOL)

Edited to say - Hubby saw me typing this and now wants them :roll:

Some good tips girls :) Hubby and I both tend to add things depending ont he mood - curry powder, paprika, nutmeg, soup mixes, etc are often added to things. My biggest secret is hiding carrots in the food so hubby won't find them! LMAO

i cant think of anything in particular at the moment but i am one to never follow a recipie i am always adding a bit of this and a bit of that to my dishes, 2 must haves are garlic and mixed herbs - they always seem to add flavour when its needs that little something else!

although one thing i love to eat that most people find quite an odd combination is a fish finger sandwich, nice fresh bread with some grated cheese and tomato sauce and fish fingers yummmmmmmo just thinking about it lol

I love fish finger sandwiches as well, but with cheese and bbq sauce, yummo!!:D
