Just wondering what your favourite flavour mud cake is. Mine is definately white chocolate followed very closely by chocolate. :d:

also does anyone have any good home made recipes for mud cake, the only ones I have ever made have been packet mix ones but I would love to try one out from scratch.

I voted chocolate because I like it better than caramel, but I'm hanging to try the while pearl cake that Leigh has got me onto. I may need to change my vote, lol.

Oh Joann you are so missing out. Its one of the best types of cakes ever made. Best eaten cold from the fridge and they are so rich in flavour and moist and sticky and oh so yummy. :d:

I don't really like mud cake but if I had to choose a flavour (for the sake of a flavour) it would be white chocolate

Oh geez you don't know what mudcake is OMG.
Rich Chocolate Mud Cake

Ingredients

180g Australian Butter
200mls Pauls Thickened cream
1/3 cup castor sugar
1/4 cup brown sugar
280g dark chocolate, chopped
2 teaspoons instant coffee
2 tablespoons marsala
3 eggs, beaten
1 cup plain flour
1/2 cup self - raising flour
1/2 cup cocoa
150g dark chocolate, extra,
1/4 cup thickened cream ,
extra cocoa for dusting
strawberries for garnishing
Method

Combine the butter, cream, sugars, chocolate, coffee and marsala in a heat proof bowl.

Cook over simmering water stirring regularly until smooth.

Allow to cool completely.

Beat in the eggs and fold in the sifted flours and cocoa.

Pour into 22cm buttered and lined spring form pan and bake for 60 minutes at 160° C.

Cool.

Combine the extra chocolate and cream in a heat proof bowl.

Cook over simmering water, stirrring until smooth.

Refrigerate until cool.

Remove cake from pan and place on a cake rack.

Pour over the ganache and allow to set.

Dust heavily with the cocoa and gannish with the strawberries to serve.

The first mudcake recipe I ever saw was for "Mississippi Mud Cake (http://www.cdkitchen.com/recipes/cat/166/0.shtml)" inspired by the muddy waters of the Mississippi River. I'm surprised our US gals haven't heard of it!

I found this recipe

Mississippi Mud Cake


INGREDIENTS:

2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 1/4 cups strong brewed coffee
1/4 cup bourbon or brandy
5 1-ounce squares unsweetened chocolate
1 cup butter (2 sticks)
2 cups sugar
2 eggs, at room temperature
1 1/2 teaspoons vanilla extract
unsweetened cocoa powder
sweetened whipped cream or ice cream, for serving

I voted chocolate; I love the ones you buy from The Cheesecake Shop chain (come to think of it, I love cheesecake too) - I used to live across the road from one!!!

I'm closer to Mississippi than Gina but I never heard of a mud cake. Thanks for the recipes. Now to find the ingredents in Wisconsin.

The mudcake from Michels Patissarie are so yummy too. We got our wedding cake through them it was chocolate mud on the bottom and white mud on the top. So so so so so yummy.

I said white chocolate..But the pearlwhite is Vanilla, not white choc...close enough :)
