View Full Version : Peppermint choc slice

I am in the process of making this gorgeous, scrumptious looking slice...I will post the recipe now and then go and put the chocolate on the top and take a pic for you so you will all be really jealous! LMAO

90g unsalted butter
1/3 cup brown sugar
3/4 cup SR flour
1/2 cup coconut
2 tablespoons of cocoa
2 tablespoons of milk
FILLING
2 cups icing sugar
30g butter
2 tablespoons of boiling water
peppermint essence (to taste)
CHOCOLATE TOPPING
200gm of chocolate (I used milk but you can use dark)
1 teaspoon vegetable oil
2 peppermint crisp choc bars (chopped up)

Preheat oven to 180 degrees celcius. Line a slice tray with baking paper.
Beat butter and brown sugar until light and fluffy. Add flour, coconut, cocoa and milk.
Press mixture firmly into tray and cook for 10 to 15 mins..til firm then cool in pan.

FILLING.
Combine icing sugar, butter, boiling water and peppermint essence until smooth. Spread over cooled base.

TOPPING.
Melt chocolate and oil in bowl over simmering water. Pour over cooled slice and then sprinkle with the chopped peppermint crisp bars.
Chill for 30 minutes then using a hot knife cut into squares.

Keeps best in fridge ...or my tummy...LMAO

Well you never told me it was peppermint. It's ok I'll pass LOL I'm not afan of peppermint, do you think I could make it without it?

Angie you could make the filling part any flavour you like....and then add whatever crushed choc bar on top to match that flavour :P

Angie whatever you fancy I guess...do you like strawberry choc..you could use stawberry and then crunch the strawberry choc on the top.....or crunchie or mars bars on the top with choc icing for the filling...oh god now Im getting more bad ideas ...I need to stop........

Yes it is just icing sugar, butter, water and flavoring (essence)

Teena ...I just have to tantalize you and tell you that the slice is even yummier this morning...it must have given the peppermint time to soak in or something.....hmmmm yummmm slurp...licking fingers now...awww melted chocolate...hummmm yum!

I'm just waiting of Aiden to wake up and the boys and I are walking to Woolies to buy the ingredients - only need the peppermint crisps. I'm saving up for going away, but I have a little spare for yummies.

LMAO...sounds like me yesterday...even worse when it is a three step recipe...I find it hard enough to wait for one step to cool :O

LMAO I didn't wait for the icing to set. Just long enough for the choc to melt, put it in the quick freeze :D and it was ready for an afternoon cuppa...and it is delicious! :d:

Absolutely not LMAO

I used to make something like this years ago but I cheated & made it with chocolate ripple biscuits :blush: . The filling was the same though :)
