Seeing as the choc peppermint slice was such a hit I thought I would post another one that we can all enjoy!

Raspberry Slice

125g butter (room temp)
1 cup sugar
2 eggs (seperated)
1 cup SR flour
1/4 cup raspberry jam
1 cup coconut

Preheat oven to 180 degrees celcius
Line a slice tray with baking paper.
Beat butter and half the sugar until light and fluffy..then beat in egg yolks.
Lightly fold in flour. Chill for 10 mins and then press into your tray.
Spread jam over the base.
Beat egg whites until peaks form, gradually add rest of sugar until mixture is glossy. Fold in coconut.
Spread this over the jam.
Bake 25 - 30 mins...lightly golden.

Similar I think but the topping is called a macaroon topping apparently :)

Angie you can use any kind of jam that you like.....even lemon butter or whatever if thats what you prefer.

This slice is one of my mum's old standbys.. except she's always used apricot jam. Very nice with a cuppa.

I love maccaroons (sp) my mum use to make then and put a dob of jam inside. I dont know how but it was yum.

But Patricia your going to make me fatter...I just have to try all these yummies. Actually I have too many kids to eat enough to get fat, we all have sweet tooths (teeth?)
