1 1/2 cups castor sugar
1/2 cup cold water
4 teaspoons gelatine
1/2 cup hot water
Place sugar and cold water into bowl. Beat for 2 - 3 minutes until sugar dissolved.
Sprinkle gelatine over hot water. Whisk vigourously to dissolve. While still hot, add to the sugar mixture.
Beat until thick and white, 5 - 10 minutes. If you like add colouring to your liking.
Pour into wet dish and refrigerate. I use a glass dish.
I then roll in toasted coconut.
