View Full Version : fiendy's lemon meringue pie

Line a 23cm pie plate with short pastry and bake blind (I think I've left myself open to a comment there Wink )

Filling
1 tin sweetened condensed milk
1/2c lemon juice
grated rind of 1 lemon
2 eggs (separated)
4 Tblsps castor sugar

Combine condensed milk, lemon juice, rind and yolks. Pour into prepared pastry shell.

Beat egg whites until stiff peaks form, add sugar a tblsp at a time, beating well until sugar is dissolved. Spoon or pipe meringue on to top of filling. Bake at 180C for 15mins or until meringue is golden brown.

Very easy and yummy. Serve with ice-cream or thickened cream (or both!).

I love lemon meringue pie. I think I will try is without the lemon rind I am not a fan of rind of any kind lol. :Hehe:

I have made this and it is absolutely delic. Best to make your own pastry though as the bought one is not as tasty.
