hi ladies i want to make pumkin soup havent made for ages and have misplaced the recipe , the only 1 i can find uses a blender my one didnt ,can anyone help please???? thanks in advance:waves:

mine uses a blender too sorry...
mum makes a scrummy one I know it has, pumpkin, potatoes, carrots, celery, salt & pepper. Dont know the amounts. If you havent got a blender you can mash it with a potatoe masher & then use your beaters. Its just to make it smooth.

Pumkin Soup
750g piece of pumkin
1tsp olive oil
1 large onion, sliced
1 clove garlic, chopped
1 bay leaf
750ml vegetable stock
2 carrots, finely grated
2 tbs chopped parsley
Cut the pumpkin into wedges, skin and all, remove seeds put in oven proof dish and bake for half an hour at 140'C-270'F.
Drain off the surplus water, which you save, and remove the skin. Heat the oil in a pan, and sweat the onion, garlic and the bayleaf for a few minutes over gentle heat. Add the stock, pumpkin and its water Stir in the carrots and simmer for 30 min. Add chopped parsley, check seasoning (salt and pepper) and serve.

That recipee was from a Super foods Recipee book.
You can have it chunky or just mash it, realy easy and yummy.

This is my receipe and l just guess the quantities
1 leek finely chopped and fried in a little olive oil just until it changes colour. I usually also add some cinnamon at thisstage about 1 teaspoon
!/2 pumpkin cut into small wedeges. 1 sweet potato cut into wedges and 2 carrots.
Chicken stock using either home made (yes l am anal) or stock cubes or packet soup stock enough to cover the vegies plus a bit more.
After it has finished boiling and the vegies are soft, i do blend it but you can also use a vitamiser or potato masher (gives those arms a workout). After this l add a tin of skinny evaporated milk for that creamy taste.
It is delicous

sandy i just cook up a pile of pumpkin with chicken stock(cubes if you like) chopped garlic and mash when ready, then mix in cream to tatse. very easy no fuss. don't forget salt and pepper to taste

Garlic Croutons for Soup
Bread 2-3 slices - not too fresh
2 tbs Olive oil
2 Cloves Garlic, crushed
Add crushed garlic to oil and leave for at least an hour. Longer the better
Cut bread into cubes, put oil in baking dish and mix around bread until all covered absorbed. Bake in hot oven until they are crispy brown, about 20 min.
