Carrot cake

Im looking for a nice, easy carrot cake recipe.

Carrot Cake
Grate 1 cup of carrot
Strain 1/2 the juice from a 400g can of pineapple juice
In a bowl mix
1 Cup of plain flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup of sugar
Add 2 eggs
5 tablespoons oil ( I don't use the oil it's up to you)

Stir in the grated carrot, crushed pineapple, and 1/2 cup of chopped walnuts
Bake in a moderate oven 180c for 34-40 mins.

Cream Cheese Topping
3 Tablespoons of butter
3 " " " cream cheese
1/2 teaspoon vanilla
250g icing sugar
Beat well. If too thick add small amount of milk to smooth.

Yep that sounds yum...I love carrot cake with the cream cheese icing....but I never had a recipe before...will make this one for sure.

carrot cake is one of my favs. My girlfriends mom makes it for her bday.. I just love it.. esp. the frosting

Oh, that sounds delicious. I don't care for pineapple, though, do you think it could be altered or do you feel that its an important ingredient in your recipe? I LOVE cream cheese icing.
