(thanks go to the Women's Weekly for this one).

Orange Biscuits.
125g Butter
2 teaspoons of grated orange rind
3/4 cup castor sugar
1 egg
1 cup plain flour
1/2 cup SR flour
2 Tablespoons of orange juice
3/4 cup coconut

Pre-heat oven to moderate (180deg)
Beat butter, rind and sugar with electric beater until creamy. Add the egg then beat until combined. Stir in sifted flours, orange juice and coconut, mix well.
Drop lelvel tablespoons of mixture onto greased baking trays. Bake for about 12- 15 mins.
Cool and ice with orange icing.

Enjoy!

I wonder if you could do this with mandarins as a substitute... altho maybe not the mandarin juice.? :P

I don't see why not Monty...give it a go and let me know. I made them today and they are really nice...little bit different. I used grated coconut instead of dessicated so mine were a little more lumpy than theirs looked but still delish!

Patricia, how do you make the orange icing! LOL I'm not a cook :blush: :help:

Monty I just use icing sugar mix ...say about half a cup to start with and slowly very slowly add some juice from an orange, mixing it until you get it just the right consistency. I'm not sure how much you will need so you are better off making it again if you need more rather than make a big lot you might not use. Hope that helped. LOL
