I've got this really yummy Red Lentil Soup receipe...
1 onion, finely chopped
1 tsp minced garlic
1 tsp minced ginger
1 tsp turmeric
1 tsp minced chilli
1 tsp ground coriander
1 cup dried red lentils
1 litre water
2 vegetable stock cubes, crumbled
425g can crushed tomatoes
1 lemon juiced
ground black pepper
1. Heat a large saucepan and coat with cooking spray. Add onion, garlic, ginger, turmeric, chilli and coriander. Stir and cook for 2 mins.
2. Add lentils and stir to coat with spices. Pour in the water, stock cubes and the tomatoes. Bring to the boil and simmer for about 20 mins, stirring occasionally, until lentils are cooked.
3. Add lemon juice and black pepper.
Nick and I eat it for a meal rather than an entree, so the receipe says it serves 4 people, but as a meal it's good for 2 people.
