Hi everyone,

I'm looking for some healthy, easy to make receipes for 1 or 2 people... I'm getting a bit bored of my receipes and want some new and exciting ones...

I'll give you a little bit of a background to my/our lifestyle... I finish work around 6:00pm and it takes me 1.5 hours to get home so I don't want to be doing complicated cooking... Nick (fiance) is still learning to cook, until we lived together he ate out or at work... Nick is also away a bit so it ends up just me for dinner... I limit my meat due to the quality and price here in HK and do not eat chicken... I would prefer less carbs in my diet...

Can you suggest any? :)

Sorry Colby, everything I think of has either meat or loaded with carbs :(

A great quick easy meal is my Vegetarian Lasagne. Sounds rather boring, but it will surprise you just how nice it is! So I'll give it to you anyway ;)

You can make your own favourite homemade tomato pasta sauce, adding chilli and fresh herbs, use fresh spinach or use my fast, lazy and in a hurry cheats method listed below.

I don't have this recipe written down, I've been making it for 20 years, so measurements are rough, I've used varying amounts of spinach and ricotta with no problems.

Pkt fresh pasta sheets
1 x large jar of any tomato based pasta sauce (Paul Newman's, Domino's etc)
Tin evaporated milk
Tablespoon of corn flour (mixed with a little water)
Salt & pepper
Tin champignons sliced/pieces, drained
250g frozen spinach
200g tub ricotta cheese
Grated Cheese

Thaw spinach and mix with Ricotta

Bring evaporated milk, champignons, cornflour, salt & pepper to the boil, stirring until thickened. Add more cornflour if needed.

Lightly spray baking dish with oil

Layer in this order;

Pasta
Half Tomato sauce
Pasta
milk & champignons
Pasta
spinach & ricotta
Pasta
Half Tomato sauce
Grated cheese - thick layer. (I like pizza toping cheese mix)

Bake 180 C 45 mins (approx) until cheese is nicely browned
