View Full Version : Easy Vegie recipe ideas for kids?

Im going do be buying a range of whatever fresh vegies are cheap enough and would like some cheap simple ideas on what i can do with them, im not much of a vege eater so my ideas are limited. :help: :help: :help:

Any suggestions would be apreciated.


BTW theres no allergies to worry about.

One of the easiest recipes I know which works well for any type of vegie is to grate/chop/dice (whatever works best for vegie!) and cook them. Cook a packet of two minute noodles as per normal ( I find breaking the noodles up helps), beat two eggs with a little bit of cream, combine all of this until well mixed, pour into an oven proof container and bake until set. (Approx 15 mins in a mod oven). As a general rule i you use two eggs and 1/2 cup vegies (or ham or whatever!) for each packet of noodles. I quite often make this up with 2 packets and keep it in the fridge for a couple of days slicing some up for lunch or snacks....very yummy and your not limited with what you can put into it...experiment!

oh I almost forgot Zoe's favorite! Simply cook selected vegies, and stir through some cheese spread!! She loves this..but then she loves vegies so I guess i'm lucky

Oooh Kelly thanks for that .....sounds great ..........i ended up buying so many fresh vegies compared to what i normally buy (i usually buy frozen) will definatly try your ideas!

Mandy, I got this recipe from an old Women's Day magazine

750gm grated vegies(potato, carrot, pumpkin,onion,zucchini, the choice is endless)
3 eggs
1/4 cup flour
1/4 fresh chopped herbs, I just used shallots
season with salt and pepper

Combine all ingredients.

Heat non stick pan, then spray with olive oil.

Place 1/4 cup of batter in pan. I flattened them out. Cook on low heat for about 5 mins each side.

Serve with sour cream or yoghurt or sweet chilli sauce or tomato sauce. The choice is endless.

oh Floria that sounds awsome too thanks for that..........i have so many vegies ill try that recipe next! im doing the noodle one tonight so we will see how that goes down with the food critic's (2 kids) LOL

I used to make something similar to Kelly when I was still living with mum. I forget everything that I had put in it, so have not tried it again.
I used a lasagna dish, grease it and cover with breadcrubs a bit like you would a cake tin.
Then all the veggies and eggs in. The noodles sound like a great idea too.

You could also make a quiche maybe, Melissa had an easy recipe posted on her forums for quiche...maybe she will post it here ;)

Here's another great recipe for you too.

1 onion peeled and finely chopped
1/2 cup peeled and grated carrot
1/2 cup peeled and grated zucchini
1/2 cup seeded and chopped red pepper
1/2 cup diced celery
1/2 cup finely chopped shallots
4 rashers finely chopped bacon
440g can drained whole corn kernels
1/2 cup grated cheese
1/2 cup sifted self raising flour
30g melted butter
4 eggs
salt and pepper

Method:
Combine all ingredients, season with salt and pepper and mix well to combine. Spoon mixture into a 20cm (8") round cake tin, which as been greased and lightly dusted with dry breadcrumbs. Bake in a moderate oven for 35-40 minutes or until set. Turn onto a plate and serve.

This works in my household all the time. I sometimes make it in a square cake tin too. :)

thanks for all th recipes ......i will give them all a go. i made the one kelly posted last nite ...i made a mamoth ammount ...it was a hit all bar the spinich i put in ......ill have to puree it so kids dont know its there!

My kids never used to eat spinach until I started cooking it in a bit of butter or olive oil and adding pine nuts. 4 out of 5 of my kids love it ;)
