Rum and raisin cake
For the R&R fans out there
I have this cooking in the oven now, maybe I'm feeling optimistic but it smells and looks good so far. 
Ingredients:
155g/5.5oz/1.25 cups of raisins
3 tablespoons dark rum (mine has a smidge more in it
)
185g/6.5oz/1.5 cups SR flour
150g/5.5oz/0.75 cup brown sugar
3 eggs, lightly beaten
Ice cream or custard for wicked indulgence on the side
Method:
Preheat oven to 180 deg C (slightly lowered mine as it is fan forced).
Cake fits into a deep 20cm round cake tin, grease and line tin blah blah blah.
Soak the raisins in rum for 10 minutes (mine have soaked while I was at the hairdresser for an hour or so).
Sift the flour into a big bowl.
Grab a saucepan out and melt the butter and dissolve the sugar into it.
Pour this into the bowl with the flour in it, chuck in the raisins and residual rum and the egg as well. Mix it all in till combined but don't overbeat.
Pour it into the cake tin and chuck in the oven for 40mins or whenever the skewer comes clean.
And hopefully once it's cooked and cooled, I'll have a pretty picture to go along with it.

oh sounds very nice, i will wait for the results as well but would prefer to wait on a slice.

I was thinking of doing just that if it turns out ok. Either that or take the leftovers to work tomorrow when I drop the scrapbook in and cook a fresh one for when I get up there.
It's out of the oven now but I haven't turned it out yet because it's still cooling. I'm thinking of sticking it in the fridge to speed up the process.
