    What do you think of this combo?

    Having people over for dinner on Friday, it's not formal or anything like that, just family. I was thinking of doing herbed roast chicken and potatoes and then salads (instead of other cooked veges). There's a green salad I really want to try, it's mint, pea and spinach (a friend made it before Christmas and I really enjoyed it) - but would the taste be a bit weird with the chicken?

    Chicken lends itself to lots of different flavours. & the mint will go well with the potatoes.

    I like hot meat or baked potatoes with a salad....sounds yummy....er what time did you say?

    Yes, it was more the mint/chicken combo that worried me. It would go brilliantly with lamb but I am not good at cooking lamb. Cutting back the mint is a good idea. The girl who made it also said she'd tried it with pomegranate and I think that would fit the chicken better so I might halve the mint and add some pomegranate seeds instead.

    Sounds good Naomi I like the idea of the pomegranate we had salads with our roast meats and baked potato's Christmas day it was a nice balance.
    TO KNOW SOMEONE HERE OR THERE WITH WHOM YOU FEEL THERE IS AN UNDERSTANDING IN SPITE OF DISTANCES OR THOUGHTS UNEXPRESSED----THAT CAN MAKE OF THIS EARTH A GARDEN.

    I am not sure about the pomegranate, I think the mint salad will be very complimentary Naomi. It sounds delicious.
    What about some boiled baby new potatoes in a dish on their own with mint and butter?
