Halve the mint for the salad, then use half of that half to herb the chicken

I think it sounds great, and really Naomi, people these days just love being invited over for a meal and not having to cook, so I am sure it will be a great evening.

Sounds delicious.... For Christmas we had roast chicken and pork with potoates and a yummy special salad made by a neighbour. Everyone loved it....it was actually way less stodgy than the full roast....especially for summer. My friend does a yummy warm potatoe salad which might work too......Hope it is scrummcious!

The mint salad is really good, it makes a nice and refreshing change from boring green salad. She just got the recipe from taste.com.au
