For our swimming club canteen, we had pies, sausage rolls, mini pizzas, sausage in bread, and our 2 best sellers were chickpea curry and spaghetti bolognese served in foam cups with plastic forks. Not sure if you have the facilities to make those.

little hot dogs for the little ones a cocktail frank and a dinner roll...smothered in sauce of course

Do you have storage for non-perishables and frozen food? That would make it less labour intensive for you (in terms of not needing to shop every week) as well as probably cheaper because you can buy bulk.

Can you get a BBQ to the grounds. Bacon and Egg rolls are always great for an early morning start.

When I was a cook on a Tall ship (looooooong time ago) there was a problem with storage and refrigeration so we went for cups of soup, as I said before, because if it's a cold day then that warmed the cockles....and don't forget the paddle pop sticks for stirring, again cheaper than horrible plastic spoons and less environmental litter.
